Jesse, the “flute” sound you said sounded like a bird around 2 mins is actually a violin. That whole solo is just one violin. The high pitched sound you hear comes from the violin hitting a harmonic note. This technique is common in guitar and other string instruments and all string instruments can do it. It involves very lightly placing fingers on a string and plucking or bowing the string in such a way that you hit multiple harmonic intervals of a single note. This allows you to play notes much higher than the highest string on the instrument, and it also gives them a different sound compared to a normal note.
