The end credit montage is basically a love letter to all of the 20th Century Fox Marvel movies, because Deadpool (and the X-Men, I'm pretty sure) are going to be officially part of the MCU.

You would have gotten a lot more of the references if you had seen the X-Men movies, the Fantastic Four movies, the Loki series and the Daredevil movie...

There's a whole bunch of inside jokes - As far as Gambit: Gambit was one of the more popular X-Men characters, particularly 1990s-2000s. Channing Tatum really wanted to play him in an X-Men movie and there were some film tests done. However, it got bogged down in production and the film was never made. That's why he had all of those jokes about always being in the Void. Elektra originally appeared in the Daredevil movie, starring Ben Affleck. Ryan Reynolds was in Blade: Trinity, where he allegedly pissed off Wesley Snipes with his constant jokes. Pretty much every person in the Void was in a 20th Century Fox Marvel Movie.
