I always thought that the funeral home might have been a stash house for the cops that go out to do runs, they could have attracted walkers to the building and once Beth and Daryl were separated they snatched her. She said everything went dark while she was fighting off a walker, they could have knocked her out. When Beth and Noah were escaping they walked passed cars that had crosses on the back windows to signify the church themed hospital they belong too.
