If you think back to the first Mandalore arc in Clone wars, Obiwon encountered the Deathwatch on the moon , and they were led by Pre Vizla (voiced by Jon Favreau). Bo katan was part of this group. The death watch would pop up throughout a clone Wars and there was a reference in Mandalorian, when Bo katan caled Din “a child of the watch”. This episode establishes that Sabine Wren’s family is related to the house of Vizla, and that her mom was a member of Deathwatch. More will be revealed over retime; that’s just what was mentioned in this episode and Clone Wars/Mandalorian, which you’ve seen E 14: a Zeb/Hondo episode. Filoni likes exploring the spiritual aspect of the force, so we got to see a different form of it in the Lamar’s religion which calls it “Ashla” we also learn Zeb is not the last of his people, and see his self-respective evolve from facing his history
