Not So Tuna Salad

A lot of people expressed interest in this recipe when I mentioned in a post in the Facebook support group. I really wanted to share it with you guys but I wasn't sure how to make it into a "meal".

So I thought I could share how to make the mixture by itself and then you can choose how to incorporate it into a meal. Whether it's by dipping veggies, pita bread, putting it in a salad, a wrap, or making a not so tuna melt sandwich, it's up to you how you want to enjoy this.

I did add the calories and macros for a sandwich melt on the last page of the PDF. Please watch the video to see what bread and cheese I used to get those macros.

Also, because we are going to be more "Fiber Focused" in 2023, I will now be adding the fiber count on the PDF for all meal prep recipes. For now, I will only be doing this for the meal prep recipes and not things like the smoothies, bento boxes, oats, etc. But I may start in the future. I hope by adding the fiber count, it helps you guys meet those fiber goals (for anybody tracking).

I actually did a freeze test on this and it thawed out nicely in the fridge. Still tasted great :)

I made this tonight and it reminded me of egg salad more than tuna, but it was really good! Cut the recipe in half and paired it with some ritz crackers and it was delicious 😋

I used cottage cheese instead of Greek yogurt. Super tasty.

Thank you! I always hate pouring it down the drain because I know how useful it is, but when I use the chickpeas I don't have an immediate use for the aquafaba. I'll start saving it now. :)

At least one week in a Mason jar, or you can freeze it in ice cube trays and keep it in the freezer for up to 3 months.

How long does it keep for?

This is something I won’t ever do because of the sheer time it would take to cover the numerous tracking apps out there. There is a feature to build your own recipe on most apps. So you just need to plug in the ingredients on your app of choice.

Zach, is there a way you could enter these recipes on a widely used food tracking site (my fitness pal, my macros +, etc.) so that we could all access and use them for nutrition tracking?

Keep the Aquafaba “chickpea liquid”!!! This can be used as an egg substitute in recipes (even meringue!!) . This is liquid gold.
