This one was fun to make (and eat)! We wanted to come up with something similar to a pizza lunchable, so this is what we came up with. Technically you could sub the crackers for pita and add some pizza sauce.
For those of you that do not like cottage cheese, Greek yogurt is a good substitute that will give some protein for very few calories.
