This is a recreation of an extremely popular dish from a restaurant in Japan that I ate at often during my time there. When I say it is garlicy, I mean it! So if that scares you, definitely go with the lower end of the amount of garlic.

Fried rice is made with cold rice. If you use hot rice it will be clumpy and sticky. One of my prep cook tasks at a Japanese Steakhouse was to cook a lot of rice and then the next day break it up for the night's service. It doesn't have to be from yesterday but it should be cold.

Does it matter if I make it all in the same day? I didn’t cook the rice last night, but I would like to make this for dinner tonight.

Can never have too much garlic

Made it per the recipe and I LOVE it! I never used to eat pasta, rice or bread for years. Now, with Zach,I seem to be losing little by little. Oh, by the way, and the food I eat is delicious!!! How can that be?!?!???

This recipe is good. I didn’t have any MSG. It was still good. My husband and son both liked it. I will definitely be making this one again. I ended up using minute rice since I messed up my first batch of rice. I’m going to sub some of the shrimp with chicken.

I made this tonight. Subbed chicken instead of shrimp because my husband doesn’t like seafood. Cooked the chicken in the smallest splash of sesame oil, salt, pepper and red pepper flake for some kick. It was delicious and now we have 4 days of lunches. I really appreciate that these meals are so good and also filling. He’s never been willing to eat my “diet food” before and it’s been a huge problem for my staying with something. Now he picks out meal preps for the week and that issue is gone.

Prepped this today for my lunches this week. Was thinking of freezing my Thurs and Fri portion to keep the shrimp a little bit fresher. Would it be better to thaw in the fridge the night before or heat from frozen?

Yes, I have made fried rice with brown rice before

I have a question about tracking this- did you factor the garlic and scallion into your calories or no? I had less shrimp (21 oz) and used basmati rice (it's what I had already) and before adding veggies it was more calories than yours without tracking the garlic and scallions.

Would substituting brown rice still cook the same?

Would minced garlic work in this?
