All my pasta lovers can take a breath......it's time for a new recipe!
When I was in Greece many years ago, I discovered a popular appetizer. It's called Feta Bouyiourdi, and it is AMAZING! I cook it often and eat it with pita bread. So I thought to myself, how can I turn this into a meal? And so here we are!
I have received a lot of requests for a vegetarian meal prep so I figured this would be the perfect dish. With the protein pasta and the cheese, it still clocks in at over 20g of protein. But if you want to bump that number up, a chicken breast can easily be added to this meal.
And if you want to make this into the traditional Greek appetizer one day, simply follow the instructions in the video, but instead of a baking dish, just use a large piece of aluminum foil that you can fold over. Place your olive oil, cheese, veggies, and seasoning all into the aluminum foil, close it up, cook it, and enjoy!
