It wasn't really easy to tell but, Rimuru had a really hard time devouring Geld. The whole processs took hours but they don't really show that in the anime. At this time, Rimuru wasn't strong enough to actually kill Geld. That's why he struggled. He wouldn't have been able to eat Geld but when Rimuru said "i'll devour all of your sins along with your brethrens sins" Geld accepted his fate and put his trust in Rimuru.
