Roasted Sweet Potatoes are a thing in South Korea. Especially during winter. They are sold by vendors in street markets. They are hot. So they warm you up walking around in the cold. Korean sweet potatoes are purple on the outside. White on the inside. When cooked they turn yellow on the inside. Our family tradition at Thanksgiving...We wrap them in foil and cook just like a baked potato. Served with lots of butter. Our family never made the casserole with added brown sugar and pecans or walnuts. And marshmallows melted on top. So when we would go to other's holiday gatherings we never ate that marshmallow sweet potato concoction. Way to sweet for us. We eat them like Koreans like them. Plain and pure. They don't even put butter on them to eat. We do! Yummy!
