I swear there was this period in the mid 2010s where everything just worked and apps were useful and easy to use. Now everything is a painful struggle... or maybe I'm just more mentally ill now and can't cope with even the slightest thing not going to plan, nah, couldn't be that

This issue with apps and websites is not a you issue. I could write a fun little diatribe about the few reasons why websites have gotten more complicated and frustrating to use. Glad you ultimately got this sorted, sorry it made you question yourself.
