There's more detail and slower (and deeper) buildup in the first half of the original FMA, then it takes an entirely new perspective as the manga wasn't finished yet. An amazing, slower and somewhat more mature take on the themes with very interesting new aspects brought up throughout it. IMO, both are amazing series, FMA is better and feels more faithful in the beginning to the manga than FMA:B which HEAVILY shorthanded most of the early story, but as a whole they are two entirely different experiences and that should be considered as an expectation going into FMA.
