After the first few points into the route, Maya will start choosing how to spend her evening. She will do so only if she's horny (over 50 points, you will see the number in this version). She gets hornier every day, slowly, and gets few points of "Sluttiness" on her own even if you don't play as Esther after that.
If you want to speed things up - use the phone as Esther and either:
a) talk to her about one of her encounters and get her horny enough to choose the event the next day;
b) if you already saw (in the end-of-day report) what's she gonna do - check the phone to get a lot more "Sluttiness" than you'd passively do.
Other than that - read the Journal to see how much "Sluttiness" or other things you need to have, to trigger another event with her.
