Re Zero has insert songs sung by the voice actors whenever an important moment happens, for example Season 1 Episode 18 had Rem's Insert Song and Emilia and Subaru's kiss scene had Emilia's Insert Song. An important piece of cut out content that is hinted at but never showed is that during 35:15, Echidna's voice can be heard because she has taken control of a Ryuzu Shima. When Ryuzu Shima entered the graveyard to save a young Garfiel, Echidna had inserted a part of her soul into Shima and this part slowly grew overtime. The light novel shows Ryuzu Shima leaving the sanctuary now under the full control of Echidna, which is the true ending of this arc. It's unfortunate the anime had to cut corners and there is no way to learn this information other than reading the light novel. The Ryuzu thats with the main gang is Ryuzu Bilma for clarification. As for Roswaal, Roswaal from 400 years ago continuously passed his soul through his children by using soul transcription. He needed a vessel that would have similar affinity to his and his children make perfect vessels. The previous Roswaal to the current one was actually a women Roswaal. The promise between Emilia and Subaru isn't shown in the anime but basically, Emilia tells Subaru what she faced in the trials, sharing her past and her reason for wanting to become queen, which is to free her people from being frozen.

There is one very important thing that you have to know before watching season 3. After watching Season 3 Episode 5, you have to watch this Re Zero Break Time video because it gives insane lore that was removed from Season 1. The anime was not suppose to continue after season 1 so they cut this information out. They decided to release this information in a breaktime video that doesn't have any official translations so the only way to view it is from this twitter post.
