When Ram says Subaru's hair was what bothered Rem in the previous episode, it was actually the smell of the witch. The smell didn't bother Rem in the first loop because it only gets strong right after Subaru's power activates, being by him Returning by Death or by trying to tell someone else about it. As Beatrice said that the smell thickened right after he tried telling Emilia. At the end of the first loop of the mansion, before Subaru dies from the curse, he visits Beatrice she says "it doesn't have anything to do with me, I suppose" after she kicks him out. Meaning she had noticed the curse was already placed on Subaru but decided not to help him.

When Ram attacks Subaru with Wind magic and cuts his cheek in the mansion, Subaru has a quick flashback of how he died previously. This is supposed to hint to him and the audience that Ram actually killed Subaru by slicing his throat with Wind magic in the previous loop, not Rem. That's why Rem also says "My sister is too kind" when she sees Subaru die. Ram was also the one who cut off Subaru's leg before Rem started torturing him. If you also noticed what magic Rem uses to heal Subaru's leg you'll see it was Water magic, not Wind.

Just a heads up, but the Re Zero fandom is currently at war with that dumb website for consistently ruining our enjoyment of the third season currently airing. Their horrible translations actually make the show worse. And they do it in every single episode of the third season. If you reach that season I'd suggest another website.
