I’m not sure if this will help anyone, but for Mo I have a great pancake recipe that I adjusted for 2 people. I recommend freezing the left overs and toasting them when you want them again. 1 cups (5 ounces) all-purpose flour 1 tablespoon sugar 0.5 teaspoon baking powder 0.25 teaspoon baking soda 0.25 teaspoon salt 1 cups buttermilk 2oz sour cream 1 large egg 2 tablespoon unsalted butter, melted and cooled slightly Whisk flour, sugar, baking powder, baking soda, and salt together in medium bowl. In second medium bowl, whisk buttermilk, sour cream, eggs, and melted butter together. Make well in center of dry ingredients and pour in wet ingredients; gently stir until just combined (batter should remain lumpy with few streaks of flour). Do not overmix. Let batter sit 10 minutes before cooking. Makes about 6 pancakes
