The animal pelt in the opening scene was a Direwolf (Robb's I assume). The sword that was melted down at the same time was Ned's. It was showing that Tywin had defeated the Starks (my opinion). Yes the actor for Daario changed. GoT does that a little. There has already been one actor change but it was minor and there will be two more (that I remember) this season. I wont say who in case you think it might spoil something. Ser Dontos (the man who talked to Sansa after following her) was the man she saved in season 2 episode 1 when Joffrey was going to have him drowned with wine.
