Vicki, My mother taught me to make pancakes in the 1950's, her advice was "Don't worry about lumps, in the batter". They don't show in the final product! If you beat the batter too much it's too thin to rise. Keep doing what your doing and some day you'll get some good advice on how to cook american foods from scratch, maybe fron someone who knows how.

Vicki american batter is thick and fluffs up. So you don't need a form. I use maple syrup and butter. If I'm at IHOP I eat fancy pancakes.
