Since I could not eat Thanksgiving dinner on account of my lovely case of covid, I have decided to cook my menu tomorrow! Cornish game hen, pumpkin pie, and mashed vegetables (potatoes, celery, carrots, onions). I always cook my poultry with a mirepoix (the celery, carrots, and onion), so this time I will simply add some potatoes. Once it's all cooked, i'll mash them to make a lovely vegetable side dish!
