I don't know full manga details so I don't know about what you mentioned. I just thought Nez's blood had been mutating with time and she didn't conquer sun instantly. As long as she had lasted till now, without eating human, I doubt any other demon lasted as long as her.

My guess is that... if turning into a demon makes you crave humans' flesh intensively, by refusing to eat humans, you refused to turn into a complete demon. Every demon succumbed to the hunger. Even Tamayo was once in Muzan's control, until she broke free with her will. She must have consumed humans as well. She is atleast known rn to be consuming blood once in a while. Nezuko didn't ever. So her body could have mutated to revert back to being human a little cuz she never really turned fully demon by appetizing on humans. By turning part human, you become a demon with perks of a demon with capability to walk in sunlight. PS. I don't know what the author had in mind but this is my way of justifying what happened. To be able to digest this random mutation myself, lol.
