PSA to JeffM's MKW ask for racing just the courses that you pick on their own: from what I can tell you can totally do this in versus. My girlfriend and I tried it after doing Grand Prix and Knockout tour for the first few days and we were able to just pick the courses and race themselves. I do agree I wish the in betweens were not as much of the race, or didn't factor into the laps of the grand prix
