Stannis never chose his wife, never loved her, only 'did his duty' with a clenched jaw. Ned and Cat were one of the few lucky happy couples where they truly liked each other - and even that took time.

Melissandre is also called "The Red Witch". She serves "The Lord of Light" which is a different god to the "Old Gods" and the "New Gods". It's a god from the East (Essos).
