Plus the Maxim Tournament arc they had at the end of OG Baki gave you more insight on the characters we're seeing now like Retsu, Doppo, Jack, Shirakawa, etc.

I'm not sure if that played into their decision, but having never seen Baki, that struck me as odd at the time. Apparently, you don't need to watch the first anime season, or so I've been told.

Part 3 is called Baki Hanma: Son of Ogre which recently finished. The manga also has a part 4 and 5, and 6 just started recently. This is technically season 2 of part 2 of the Baki franchise.
