He tells Guts in volume 5 that he wants to have his own country, and in volume 6, he describes his philosophy of life to Charlotte by equating one's ultimate ambition to a dream they would devote their life to.
In Japanese, dream is 夢, pronounced ゆめ (YUME). Like in English, it holds this meaning of a far off ambition as well as the more mundane one (dreams when you sleep). It's a very common word. It's featured in a number of important scenes and phrases, like the Bonfire of Dreams:
夢のかがり火, pronounced ゆめのかがりび (YUME NO KAGARIBI).
In volume 22, on the Hill of Swords, as he stands before Guts in his body of flesh, Griffith tells him オレはオレの夢を裏切らない. It's pronounced オレはオレのゆめをうらぎらない (ORE WA ORE NO YUME WO URAGIRANAI), and translates to "I will not betray my dream".
