As a manga reader, there really wasn't a great stopping point. Maybe chapter 403 but then season 8 would have been 27 chapters lol. They're in a weird state where the manga was still going during production and needing to conserve enough for next year . They could have added filler and ended with toga Ochako, but that would be depressing lol. Basically, this adapted until ch 398 of the manga. So we have 32 chapters left. Plus, probably some bonus content in the last volume because we're supposedly getting more. Manga readers are actually happy we might get anime expanded content. S8 is going to be nuts. Just straight fire. Did you see the poster for season 8? It's so badass.
