I'm not sure where you heard the other ones weren't so great except for the newer 2018 (Fallout) but they are all worth watching with the exception of MI2. MI2 is not really a bad movie, but it's a very different tone and regarded as the worst of the franchise. However from 3 on, they are very, very good and I would highly suggest watching them all. Especially since you will miss out on some of the context and backstory if you skip straight to 2018. So my suggestion would be skip 2 or maybe checkout a summary, but it's really not needed and the series kinda pretends like it didn't happen. Start with 3 and watch them in order and I think you'll really love them! This is one of the few series that get's better and better with each movie.
