Today's pick is Pearse Founders Choice. Thomas Pearse Lyons, a biochemist and businessman was born in Ireland, but moved to Kentucky in the 1970s. He ended up back in Ireland and started Pearse Lyons Distillery in a very beautiful converted church with gorgeous stained glass windows on Dublin’s Thomas Street.
I first heard of Pearse Lyons in Whiskey Club, and I so loved the photos and story of the converted church to distillery, that I was really excited about the whiskey. Unfortunately, it was the 5 year single malt and I didn’t like it. So, after sharing my disappointment with the pub owner on another visit, he suggested I try Pearse Lyons Founders Choice, which I loved! It is a 12 year old Single Malt aged in ex Bourbon barrels from their sister distillery, Town Branch, in Lexington, Kentucky.
Notes from Master of Malt:
Nose: Crackles of woody tannins lead among buttered toast and rich vanilla. Orchard fruits add depth in the backdrop.
Palate: The fruit develops to become ripe and juicy against big oak notes and prickles of nutmeg underneath. Butterscotch adds a complex sweetness throughout.
Finish: The oak spice tingles away in a composed, long finish.
Overall: A fabulously distilled and developed dram of real class.
