A little bit of updating here.
I've been re-creating my UI in Unity. Now they're not just mockups, but actually clickable buttons and dropdown lists.
I'd like to make this screen more "rich" and interactable tho. Like maybe making her eyes track the cursor. Or say something about your action. Or maybe, instead of just playing the idle animation, you can... you know, click her chest and see her reaction :)
When it's done I'll post a longer devlog.
I also started designing the game data structure (like a character's traits, what rules you can assign to her, etc). I originally made them in Unity's ScriptableObject, but the more I use it the more I hate it... so they're all in a much simpler, more human-readable format now. Like this:

It will also make modding and localization easier. Of course those are long-long-long-term issues and not something I'd spend too much brain power on for now.
