I'm late with the comment, but Ceasar Clown was so scared because Big Mom Pirates are very powerful - most of the siblings that were at the wedding are Haki users so they could use it on the bullets and shoot him even though he has a Logia fruit powers (like all the girls from Kuja Island were using it on their arrows). He can get shot, punched etc. He can of course use his fruit's powers, e.g. take the oxygen out of the air, use poisonous or explosive gas etc., but I think he didn't because he would become a main target of the Big Mom Pirates at that moment... And they were soooo outnumbered as well. The Big Pirates would probably quickly come up with a counter strategy and that would be it. The way the Tamatebako plot-tool comes around at that moment is just poetic - the good deed that the StrawHats did comes around to help them in the time of need. It can be called karma, destiny or whatever but it's just very satisfying to witness. It happens constantly throughout their journey - StrawHats do something good and then it helps them down the line. So good. :)
