I suspect it all goes back to the first division of YS/UN. The angels are white fire of YS and the Devils the black fire of UN. Angels, being on the side of Order, see everything as a division of Good and Evil. Thus, there can be only one 'Good" gender: male. Adding a nice smear of religious intolerance on top of the misogyny/anti-queerness.
