Try to rewatch the Franz scene. His lower half is actually missing. Thats why Armin was so shocked when he see her giving Franz CPR.

Actually it's not pronounced the way you say it is. If you say the name at a normal pace and not slow it should sound like Meeka-suh. The "K" sound in the name is in the beginning portion of her name not the later.

Mikasa is actually so skilled that she is stationed in the Rear Guard with the veterans while every other recruit is in the Middle Guard. She just graduated and is a veteran level soldier.
