If Hermione basically knows about Harry using time travel to fix the future and that Harry has a harem of witches, and hasn't shunned him or sold him out to Dumbledore yet...then I can't see see saying no to binding herself to Harry, other than being dead set on viewing Harry as a sibling. Binding herself to Harry would ensure her physical needs could be more than met on the regular and allow her to have access to enough magical horsepower to ensure her research into magitech succeeds in a timely fashion....plus maybe she'll feel the need to help Harry snag a third mother-daughter combo - even if offscreen - by seeing if an offshoot project for restoring or giving a person a magical core could give Hermione's mother access to magic. And of course need Harry's massive pool of magical power to jump-start things 😜
