Today was a good day. The chickens produced a lot of eggs aso I baked three quiches, one Asian, flavored with broccoli, chives and chicken and a hoisin type seasoning. one southwest style, chicken, onion, cilantro, black beans, and corn. The last one is more of an Italian style, pancetta, chives, Gorgonzola cheese. I’m thankful to my chickens for producing these eggs. It’s good to know that when another situation arises where we don’t have access to food out here that we can still have protein from these eggs. Natural disaster can cut off food supply here from time to time but we all make it through. Don’t give me wrong, we definitely plan ahead for hurricane season, and natural disasters, because it’s necessary to do out here, in the Tropics, but you can’t plan everything. That’s why I love having my chickens, my garden, this house. It feels nice to be home even though I miss my kids and family back in the Quad cities. In a month, I’ll be able to go back and give everyone hugs again, get some work done at Antique Archaeology, enjoy my family for a little while again. Until then, I’m going to bake some quiches, enjoy my life here, and continue to heal. By the way, my healing is going great! I taught a full fan dancing class last night, and I was able to teach the entire time without pain and it was so refreshing! I’m currently hosting four workshops per week and I’m able to keep up with that piece, so I feel really good about my progress! Still looking forward to having more mobility, but I’m re-learning everything day by day.
