Melisandre has a scene in like season 4E7 where shes talking to shireens mother and doesn't have the necklace on and she still looks young. Its never really explained but its most likely the writers forgot about that. But there is theory that the mother does see her in her true form, but its not shown to the viewer because she's so devoted to the lord of light at that point it doesn't even faze her.
