I think they explain it later, but (if I remember this right) what happened is this: Smiley, the slime, had eaten some kind of lizard devil fruit, hence why it looked like one. That giant candy killed the slime and turned it into some kind of gas? When a devil fruit user dies, the power leaves the dead body and basically latches onto the nearest fruit, turning it into a devil fruit. So that apple should now be the lizard devil fruit Smiley had.
