Many spirits are manifestations of nature, They can be rather talented as well, manifesting in the physical world as creatures that exist there or as nightmarish versions of them. You will see more about it later as the series progresses. As for Iroh seeing Aang when he was astral projecting into the spirit world, that too will be touched upon later. For now, however, let's just say that he's a more well-rounded individual than most (no pun intended.)
