If you have a sweet tooth this month, you might want to give these cookies a try. They are gluten free, dairy free, nut free, and a refined sugar free option!
Ingredients:
1 cup unsweetened coconut flakes
1 cup dates
1/4 cup chocolate chips / or cacao nibs or dark chocolate for a refined sugar free option
1 teaspoon coconut oil
Step 1: Toast the coconut flakes on a pan. Careful not to burn! They toast up fast. About 1 minute then stir to get the other side.
Step 2: Pulse dates along with the toasted coconut flakes in a food processor. it should be well incorporated and sticky.
Step 3: Form little round balls, flatten, use a straw to make a center hole if desired. Place them on a plate and in the freezer for about 5 minutes.
Step 4: Meanwhile, place the coconut oil and chocolate in a pan on low to melt.
Step 5: Dip the bottoms of the cookies into the melted chocolate. Drizzle the chocolate over the cookies using a zip lock bag or just a spoon. Place in the freezer for a few minutes to harden the chocolate.
