With all of these illnesses going around we need some sunshine broth! This broth feels amazing sliding down a sore throat and is just what we long for when we need to warm our bodies. The aroma is savory with notes of garlic, onion and ginger.
Sip on this warm, mineral rich broth throughout the day.
Sunshine Broth Recipe:
1 whole chicken
1 tablespoon whole black peppercorns
1 tablespoon ground turmeric
1 knob of fresh ginger (size of a thumb)
3 tablespoons of sea salt (if you like salty you can add more)
2 carrots
2 stalks of celery
1 whole yellow onion
2 heads garlic
2 teaspoons of oregano
1 teaspoon thyme
Place all the ingredients into a large stockpot. Fill the pot with water, enough to cover the whole chicken entirely.
Boil for 2 hours at a low boil.
When finished shred the chicken for dinner, strain the broth through a mesh strainer into mason jars.
Serve with extra sea salt and lemon!
If you are feeling extra, add a splash of warm coconut milk with lemon into your mug.
