How many times do you sign up to bring the salad for potlucks and gatherings? Or how often do you crave a salad but you don't like your own homemade salads! haha I know I do both all the time. I love clean salads from healthy restaurants, but I never want to pay for one when I can just make it at home. Here is an amazingly delicious simple salad recipe and a really easy salad dressing recipe. I'm sure you will have most of these ingredients on hand.
Spring is just around the corner and after typical heavy winter meals, our bodies need and crave fresh greens, even bitter herbs. I know that when we first started *TRYING* to eat healthy, we knew we needed to eat fresher food and more greens. So I would cut up a head of iceberg lettuce and toss in a few tomatoes, then smother it with Ranch brand dressing. I didn't feel any better and didn't see the point of eating salads. I knew I wasn't ready to try strange lettuces or let alone make my own salad dressings. BUT if I had this recipe, I would have tried it because it is so easy.
Why you need to make your own salad dressing:
Salad dressing ingredients are so bad for your body. If you flip the bottle around and read the ingredients, you will find that most of them are filled with bad, rancid oils and sugars that disrupt your gut's microbiome and have been linked to numerous chronic health issues. My salad dressing recipe actually encourages growth of healthy gut bacteria and has no processed, refined sugars.
Here's a recipe you can adjust according to your likeness and readiness.
1/2 cup 100% pure avocado oil
3 tablespoons apple cider vinegar (you can make your own from my video or purchase our favorite brand here)
1 Tablespoon stone ground mustard (we like this brand)
1 1/2 Tablespoons Honey
salt/pepper
Shake well in a mason jar.

Organic Spring Mix Salad or Arugula (arugula is bitter but I personally love it)
1 apple finely diced
Shredded carrots
1 Cucumber diced
1/2 Red onion finely sliced
Walnuts, chopped (hint: I like to roast mine in a bit of butter and honey in my cast iron)
