Joined a few months ago and decided to go back and watch all the bonus videos that strike my fancy. Having seen this video, which sprung from a desire to prove to the internet that some pancake mix is just bad, I am *extremely* happy with my decision to become a patron and I wish I could support at a higher level. It's because in Europe we don't add baking powder which is what makes them fluffy (we call those American pancakes). We don't because we often put toppings on them and then roll them up which you can't do when they are fluffy :)

We do have decent mixes, but since English pancakes only have flour, milk, and eggs in them, they barely save any time vs just eyeballing it with the separate ingredients. They’re a bit thicker than crêpes – if you’ve ever had a Dutch pannenkoek, they’re quite similar

Real question: are pancakes more crépe-like in the UK than in the US? I've learned to like pancake mix since having kids, especially when you have one child who likes pancakes, but will only eat 1 or 2 for breakfast, so you don't waste an egg for a recipe that yields 6-8.

Traditional english pancakes are similar to French crepes. As far as I know American-style pancakes originated in Scotland and tend to be called scotch pancakes or drop scones over here. English flapjacks are kind of like granola bars but soft and chewy rather than hard and crunchy and they’re absolutely delicious.
