Early look: the best way to store homemade stock

I've always understood the instinct to store homemade stock in an ice cube tray, but... it always would (1) take a lot of freezer space for a single batch of stock and (2) risk a bit of grease spilling in the freezer (a risk I'm somewhat paranoid about).

In the last year or so we've started using these 'ice bags' which've just been perfect for us. We were sharing on the Discord and someone else gave it a try - and similarly loved it. So before we shoot off for a week and a half to do some eating and research in west Yunnan (around the Myanmar border), we figured we'd share our personal stock storage system real quick :)

Cheers! One tip for gelatinous stock is to grab some frozen duck feet, which’re often available at Chinese supermarkets in the west I think? Even just 5-6 feet really can help push that needle

Wow, thank you. Gonna give this a try. How did I not know these exist! I've been using regular ice cube trays and have been struggling to get real gelatinous stock cubes out without melting them a bit. I'd be putting them in a ziplock to store after frozen anyway, so not really any more waste.
