Healing Bowl + My Favorite Simple Sauce

This is by far my favorite combinations of foods.  Mostly due to this sesame sauce, that is reminiscent of a creamy cheese in my opinion.

Sauce ingredients:

1.5 cups Tahini (you can make your own by toasting raw sesame seeds for 10 minutes in the oven then blending them with a food processor)

3/4 cup apple cider vinegar

3/4 cup coconut aminos

2 cloves garlic

blend all ingredients in a blender on high, pour into a jar and leave in the fridge for a couple hours for the flavors to combine well.

Fermented Rice:

Cook 1 cup of short grain brown rice in 6 cups of water without a lid.  After 40 minutes remove rice from heat, drain out the excess water and place on the counter with the lid on to steam for 10 minutes.   Mix the rice with 1 cup of homemade sauerkraut.  It gives the rice a really nice tangy element, as well as turning it pink!

Summer salsa

3-4 large heirloom tomatoes or 3 cups chopped cherry tomatoes

1 diced cucumber

1 diced red bell pepper

1 small red onion diced (or half of a large one)

juice of one lime

1 bunch of chopped cilantro

Add all ingredients to a bowl and mix well.  Add salt and pepper to taste

Perfect Black Beans:

Soak 2 cups of black beans in lots of water overnight.  In the morning drain and rinse the beans and place into a big pot with 10 cups of water over medium heat on the stove.  Cook for 1 hour uncovered until the beans are very soft.  Add more water if it gets low.  Once the beans are nice and cooked, drain the excess water and store in the fridge until ready to use.

Perfectly cooked corn:

Bring 10 cups of water to a boil.  Once the water is oiling, add your corn to the pot and turn off the heat.  Put the lid on the pot and let the corn sit in the hot water for 10 minutes.

Serve with greens or sprouts and lots and lots of your yummy sauce! Enjoy!
