This Is such a lovely summer salad to make, and tastes so great with some avocado, rice, and beans. On top of that its very simple to make!
3-4 heads of corn
1 small red onion finely diced
2 cups cherry tomatoes cut into halves
1 cucumber diced
1 Red Bell Pepper diced
1 Bunch Cilantro chopped
Juice of 1 Lime
Salt & Pepper
Husk the corn and place them in a pot with 1-2 inches of water. Put the lid on the top of the pot and let "steam" cook for 15-20 minutes until done. Drain the water and allow the corn to cool.
Use a knife to cut the kernels off the corn into a bowl. Add the rest of the ingredients, and mix well. Make sure you chop all the vegetables very finely, it tastes better when the flavors mix together. Put the salsa in the fridge for a couple hours before serving.
