Homemade Corn Tortillas + Hummus

Homemade corn tortillas are one of the easiest and simplest things to make, and taste truly amazing.   Best of all, they are only 2 ingredients, which is even better.

Hummus and tortillas is a gift made in heaven i swear.  One of the best combinations of things.  


Simple corn tortillas

2 cups Masa Harina (i find the yellow masa tastes better than the white)

2 cups almost boiling water

pinch of salt


Place water into a small saucepan on the stove.  Bring to almost boiling temperature (you can see little bubbles appearing)

Turn off the heat and add your corn flour, and a little salt.  Stir with a spoon until well incorporated.  It can be a little crumbly here.  Place a damp warm towel over the pan and let sit for 20-30 minutes.

After 30 minutes, knead the mixture until it forms a soft round ball.  It should be similar to the texture of playdough.  Separate into 8 even pieces and roll into individual balls.  Place one of the balls in between 2 pieces of parchment paper, and roll it out using a rolling pin. 

Heat a large pan until its warm (i use cast iron here)  

Place one of the rolled out tortillas onto the hot dry pan (do not use any oil!)

wait 30 seconds and flip.  Cook for 20-30 seconds more.


The Best Hummus Recipe Ever

1.5 cups dry garbanzo beans

1/2 cup coconut aminos

1/4 cup apple cider vinegar

4 garlic cloves

1/2 cup tahini

1/2 cup cold water (or more if its too thick)


soak your beans overnight or for 8 hours.  Drain your soaked beans and add to a pot along with 5 cups of water.  Cook without a lid for 45 minutes or until mushy all the way through (i use a pressure cooker and it tastes roughly 20 minutes)

Drain your cooked beans and let cool for 10 minutes.  

Add all your ingredients to a high speed blender or a food processor.   Blend until well combined, you might need to add more water in order for it to blend to the right consistency.  I like mine pretty thick but it can get tricky to blend that much.  Its really just up to you!

This recipe will make enough hummus to last you the week, so you can eat all the tortillas and hummus your heart desires. 


Serve with curry, sprouts, and fermented cabbage:)

I've made the corn tortillas twice so far, once with a non-stick pan and once with cast iron(on which they come out way better), and I've been making your hummus recipe for a while (saw it in one of your videos) and my friends are like "your hummus is pro" and I'm like it's not me its Isabel Paige!!
