We’ve been told and shown everyone in Kings Landing is in someone else’s pocket, if she were to be open right off the bat about her hatred of the Lannisters, it’s very likely she just told a spy something that would be twisted into treason. Sansa acts out because this is the only time she’s ever had any power over someone, she can demand anything to a hand maiden, everywhere else she’s a traitors daughter.
