There are also varieties made out of white corn, and kinds made with spices like chili, cajun/creole seasonings, peppers, or jalapenos. I've had chili with cornbread baked on top like a southwestern take on a shepherds pie. Cornbread is usually made in cast iron skillets, but its super popular where I live to make corn muffins--usually fluffy, honey cornbread baked in muffin tins. And while I've never tried it personally, but I know people who mix honey/maple syrup and sausage in their cornbread for a breakfast variety.
