Another is that blood on the blade can dampen the impact and thus reduce the cutting power of the edge, in effect making it react as though dull when you try to use it. The final reason is the least important in the middle of combat, but the most important long-term: a blade covered in blood will be more likely to rust. Blood is basically salt water with an iron supplement, and salt water provokes oxidation in ferrous metals. Swords aren't made of stainless steel unless they're only for decoration.
