2023-03-19 16:38:04 +0000 UTCHi Nikki. I fly by the seat of my pants, but thankfully left myself some notes on the recipe. "I used one head of riced cauliflower and half the rice. I did not need any milk. I added 2 cups of water instead of 3. It was a little soupy, but my rice did not stick. Instant pot for chicken, rice, cauli, and broccoli for 4 minutes on high. Natural release 10 minutes." I did not use the Doritos at all, personal preference.

2022-12-30 13:52:22 +0000 UTCI made this last night using my instant pot. I tweaked it even more by ricing a head of cauliflower and using half the rice. I did not add the Doritos. My family loved the dish and I loved how simple it was.
