WEPA! It's time to make some Puerto Rican food!

This is a staple in my house and I'm extremely excited to share it with everybody as part of the meal prep rotation. This recipe is kind of a double bonus because once you learn how easy it is to make arroz con gandules, you'll be making it with other dishes instead of just plain rice.

There are some notes on the last page of the PDF concerning the type of pot used to cook the rice. Be sure to check that out.

Serve this with a nice little side salad or a side of your favorite veggies to make it more filling and add some fiber and micronutrients.

Once I receive some feedback, I'll decide whether or not more Puerto Rican food is something that will be added in future content.

Made this for my lunch prep this week. It came out great. I diced the chicken into pieces instead of pounding out. If it’s a heat and eat meal prep recipe I prefer everything in it is already bite size so I don’t have to bust out a knife at my desk. I also had half a bunch of cilantro left in my fridge, so I threw the stems in to cook with the rice and chopped the leaves up and sprinkled into the chicken after it was done cooking for some brightness. I will be making it again for sure. It was so good I could have eaten 2 portions for lunch today!

Is it possible to use a rice cooker to make the gandule rice?

I made this tonight for dinner and it was delicious. Had a problem with the rice sticking to the bottom of the pot though 😏

Ugh! I tried three grocery stores in my Twin Cities suburb this weekend and couldn't find pigeon peas or Sofrito! There's a couple other stores I could try, but their online apps didn't show the product either. I'm not deterred - Amazon will rescue me! I'm super excited to try this recipe!
