It's always interesting to see how they deal with the enemies. Whether it's from filler episodes or not, it's still fun to see. I've mentioned this before in the Skypeia arc but Luffy tends to surprise you with these clever tactics when he's fighting. He's a naturally gifted fighter and is always trying new things to try to overcome his opponents :)
